These homemade Beef Breakfast Sausage are easy to make and packed with herbs and spices. Pair with some eggs for a delicious, high-protein breakfast that will keep you full and energized all morning!
These Beef Breakfast Sausage have been such a game changer for me when it comes to getting in enough protein at breakfast! Each patty is packed with 10g of protein and they reheat well, making them perfect for meal prep and those busy mornings.
Although breakfast sausage is typically made with pork, or even chicken, I really wanted to make a beef version, especially since it’s a nutritious, and often more affordable, protein source. If you’re like me, it’s something you may already have in the freezer, making them even easier to throw together.
Making your own at home also allows you to control the ingredients in them, so you can avoid things like preservatives, fillers and added sugar. I’ve used a variety of herbs and spices in these, but feel free to play around with them to suit your taste!

Ingredient notes
- Ground beef: 80% lean ground beef works great here. If within your budget, I recommend choosing grass-fed/finished beef for more nutrition benefits. Although I haven’t tested it yet, ground pork should also work as a substitute!
- Beef bone broth: this helps add more moisture and gives the sausage a slightly softer texture. If you don’t already have some on hand, water is perfectly fine to use.
- Baking soda: baking soda raises the PH of the beef mixture, resulting in juicer and more tender sausage with better browning.
- Herbs: we’re using a combination of dried thyme and sage. If you have fresh on hand and would prefer to use that, you’ll just have to adjust the measurements – 1 tbsp of fresh herbs to 1 tsp dried herbs.
- Spices: garlic powder, onion powder and paprika add plenty of flavour to the sausage. Red pepper flakes are optional, but are great if you like a little heat!
- Sea salt and black pepper

How to make beef breakfast sausage

Step 1: Add the beef breakfast sausage ingredients to a bowl and mix together with your hands. Allow to sit for 20 minutes.

Step 3: Cook the patties for 2-3 minutes per side, or until browned and cooked through.

Step 2: Form the mixture into 12 patties and use your thumb to make a shallow hole in the top of each one.

Step 4: Transfer to a plate lined with paper towel and repeat with remaining patties. Serve with eggs, waffles or your favourite breakfast foods and enjoy!
How to serve beef breakfast sausage
- Eggs: my favourite pairing! This sausage goes perfectly with fried eggs, scrambled eggs, poached eggs or however you like your eggs.
- Breakfast plate: if you don’t eat eggs, trying pairing with roasted sweet potatoes, sautéed greens, fruit or avocado toast.
- Waffles or pancakes: for a little sweet and savoury breakfast combo. This is also a great way to create a more balanced meal that supports blood sugar, compared to serving waffles or pancakes on their own.
- Breakfast sandwich: pair with a fried egg, cheese and an English muffin for a delicious sandwich!
- Lunch or dinner: if having beef for breakfast isn’t your thing, these also make a really delicious lunch or dinner served with a salad or another side.

Beef Breakfast Sausage
Ingredients
- 1 lb lean ground beef 80/20
- 1 tsp dried sage
- 1/2 tsp dried thyme
- 1 tsp sweet paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/8 tsp crushed red pepper flakes optional
- 3/4 tsp sea salt
- 1/2 tsp black pepper
- 3 tbsp beef bone broth or water
- 1/4 tsp baking soda
- 1 tbsp avocado oil
Instructions
- Combine the beef, seasoning, broth and baking soda in a medium bowl. Use your hands to mix the ingredients, being careful not to over-mix which can make the sausage dense once cooked. Set aside for 20 minutes to allow the flavours to come together.1 lb lean ground beef, 1 tsp dried sage, 1/2 tsp dried thyme, 1 tsp sweet paprika, 1 tsp onion powder, 1 tsp garlic powder, 1/8 tsp crushed red pepper flakes, 3/4 tsp sea salt, 1/2 tsp black pepper, 3 tbsp beef bone broth, 1/4 tsp baking soda
- Divide the mixture into 12 balls and then flatten into patties, about 2 1/2-3" wide. Use your thumb to make a shallow hole in the top of the each patty.
- Heat oil in a large skillet over medium high heat. Working in batches if needed, add the patties and cook for about 2-3 minutes per side, or until browned and cooked through. Transfer to a plate lined with paper towel.1 tbsp avocado oil
- Serve immediately or store in the refrigerator for up to 4 days.
