These no-bake Chocolate Chunk Cookie Dough Bites are filled with healthy ingredient like oat flour, collagen peptides, almond butter, maple syrup and dark chocolate. They’re easy to make and so delicious!

I’ve always been someone that craves a little something sweet after dinner, and probably always will be! So anytime I can make something that satisfies my sweet tooth but is secretly packed with nutrients, it feels like a win-win situation.
These Chocolate Chunk Cookie Dough Bites are one of those treats! They’re balanced with fibre, complex carbs, protein and healthy fats, but taste decadent and are packed with chunks of dark chocolate.
I’ve also snuck in one of my favourite supplements, collagen peptides, for a boost of protein and all those skin, nail and hair benefits.

Ingredient notes
- Oat flour: oat flour makes the base of these bites. You can easily make oat flour at home by grinding rolled oats into a fine powder, but you can also purchase it already ground. Although I haven’t tested it, almond flour would likely work as a substitute. Because it absorbs less liquid than oat flour, I suggest starting with less coconut oil (you can add some as needed to reach the right consistency).
- Collagen peptides: adds some extra nutrients and protein to the bites. Make sure that you’re using an unflavoured/unsweetened version.
- Almond butter: choose a creamy almond butter that’s been well-stirred. You could also use peanut butter or cashew butter. Looking for a nut-free version? Try these tahini cookie dough bites!
- Dark chocolate: for the chocolate chunks in the dough, as well as the chocolate drizzle. I prefer my treats not to be overly sweet, which is why I typically use a dark chocolate bar with 85% cacao, however anything over 70% works! You can also use mini chocolate chips in the dough if preferred.
- Maple syrup: for some sweetness.
- Coconut oil: helps to hold the bites together and smooth out the melted dark chocolate for the coating.
- Cinnamon: ground cinnamon adds some more warmth and flavour. I’m a huge cinnamon fan so usually add some extra!
- Vanilla extract: for that extra hint of flavour.
- Sea salt: a must in my opinion! You’ll need fine sea salt for the base and flaky sea salt for topping.

How to make cookie dough bites
One of the best parts about these bites (besides how delicious they are) is how easy they are to make!
- Add the dry ingredients to a bowl and stir to combine.
- Add the wet ingredients and mix well, adding milk as needed to reach a cookie dough like consistency.
- Mix in the chocolate chunks and roll into balls.
- Melt the chocolate and coconut oil, drizzle over the bites and top with flaky sea salt. Allow to set in the freezer for 10 minutes. Enjoy!

Chocolate Chunk Cookie Dough Bites
Ingredients
- 1 cup oat flour
- 1/4 cup unflavoured collagen peptides
- 1/4 tsp ground cinnamon or to taste
- 1/4 tsp sea salt
- 1/2 cup creamy almond butter
- 2 tbsp melted coconut oil
- 2.5 tbsp maple syrup
- 1 tsp vanilla extract
- Unsweetened almond milk or water as needed
- 1/4 cup chopped dark chocolate see notes
Chocolate Drizzle
- 2 tbsp chopped dark chocolate
- 1/4 tsp coconut oil
- Flaky sea salt
Instructions
- Add the oat flour, collagen peptides, cinnamon and sea salt to a medium bowl and stir to combine.1 cup oat flour, 1/4 cup unflavoured collagen peptides, 1/4 tsp sea salt, 1/4 tsp ground cinnamon
- Add the almond butter, coconut oil, maple syrup and vanilla extract, and stir until well combined. Allow to sit for a few minutes to allow the oat flour to absorb the liquid. You should have a cookie dough like consistency that easily sticks together. If needed, add a small amount of almond milk at a time, mixing in between, until you reach your desired consistency.1/2 cup creamy almond butter, 2 tbsp melted coconut oil, Unsweetened almond milk or water, 2.5 tbsp maple syrup, 1 tsp vanilla extract
- Stir in the chocolate chunks. Roll into small balls (~ 1 tbsp of dough each) and set on a small baking tray lined with parchment paper.1/4 cup chopped dark chocolate
- In a small bowl, combine the dark chocolate and coconut oil. Microwave in 30 second intervals, stirring in between, until melted. Drizzle the melted chocolate over the cookie dough bites and top with flaky sea salt. Place the tray in the freezer for 10 minutes to allow the bites to firm up and the chocolate to set, then store in the fridge until ready to eat.
