Orange Creamsicle Chia Pudding

This Orange Creamsicle Chia Pudding is super creamy and packed with that delicious orange vanilla flavour. Made with greek yogurt, fresh orange, chia seeds, and a touch of turmeric, it makes the perfect nutritious snack or dessert!

This chia pudding is the perfect way to celebrate citrus season add enjoy something a little more refreshing and uplifting during these darker winter months. 

It’s also incredibly delicious, easy to make and made with healthy ingredients of course! 

I love making a batch or two at the beginning of the week to enjoy as a snack or part of a breakfast. I hope you enjoy it as much as I do!

Ingredients

  • Chia seeds: of course you can’t have a chia pudding without the chia seeds! These are a great way to get more fibre into your diet and are a good source of omega-3 fatty acids. 
  • Orange: we’re using the zest and juice of fresh oranges for the best flavour. No need to strain the pulp! 
  • Greek yogurt: for that nice creamy texture and some added protein. Make sure to use an unsweetened yogurt. If you’re dairy-free, you could also use a plant-based option like coconut yogurt. 
  • Almond milk: I use unsweetened almond milk, but feel free to use a different type of non-dairy or dairy milk. 
  • Maple syrup: in addition to the orange juice, this adds a touch of sweetness to the chia pudding. Honey is another great option. 
  • Vanilla extract: adds to that delicious creamsicle flavour. 
  • Turmeric: completely optional, but it’s a great way to sneak in some extra nutrients since turmeric is anti-inflammatory and rich in antioxidants. 
  • Sea salt: just a pinch to help enhance the other flavours.

How to make orange creamsicle chia pudding

Step one: whisk together all the ingredients, except the chia seeds. 

Step two: add the chia seeds and whisk again. Allow to sit for about 10 minutes before whisking once more. 

Step three: allow to set in the fridge overnight or for at least 2 hours. 

Step four: when ready to eat, divide the chia pudding into bowls or jars and top with greek yogurt. Serve and enjoy!

Ingredients
  

  • 1/4 tsp orange zest
  • 1/3 cup fresh orange juice with the pulp
  • 1/2 cup plain greek yogurt plus more for topping
  • 1/2 cup unsweetened almond milk or milk of choice
  • 1 tsp vanilla extract
  • 2 tsp maple syrup
  • 1/2 tsp turmeric powder optional
  • Pinch sea salt
  • 1/4 cup chia seeds

Instructions
 

  • In a container or bowl, add all the ingredients except for the chia seeds and whisk well to combine.
  • Add the chia seeds and whisk again. Allow to sit for about 10 minutes before whisking once more.
  • Cover the container or bowl and place in the fridge overnight or for at least 2 hours.
  • When ready to eat, divide the chia pudding into jars or bowls and top with greek yogurt. Enjoy!

Notes

To make this recipe dairy-free, use coconut yogurt or another non-dairy yogurt instead of greek yogurt.
