Cucumber Apple Cider Vinegar Mocktail

This Cucumber Apple Cider Vinegar Mocktail is a delicious and refreshing summer beverage! Made with fresh cucumber juice, lime juice and apple cider vinegar, it's low in sugar, beneficial for digestion and can help stabilize blood sugar.

Ingredients
  

  • 1 cup chopped cucumber, skin on
  • 1/2 cup filtered water
  • Pinch sea salt
  • 2 tbsp fresh lime juice (plus zest if you want to rim your glass)
  • 2 tbsp raw apple cider vinegar
  • Sparkling water to top
  • Lime zest and flaked sea salt for coating the glass (optional)
  • Fresh mint leaves and cucumber slices for garnish (optional)

Instructions
 

  • Add cucumber, water and sea salt to a blender and blend until cucumber is broken down.
  • Strain through a fine mesh strainer into a jar or cup, pushing the solids to get the juices out. Add lime juice and apple cider vinegar and stir to combine.
  • Take your glasses and rub the cut side of a lime over the rim. Roll in lime zest and flaked sea salt to coat. Add ice cubes.
  • Pour cucumber juice into the glasses and top with sparkling water. Garnish with mint leaves and cucumber slices if desired and serve immediately. Enjoy!

Notes

If you'd like to add some sweetness to this drink, feel free to add 1-2 tsp of maple syrup.
New to apple cider vinegar? Start with 1/2 tbsp per serving/glass and work your way up.
Since vinegar is acidic and can affect your teeth’s enamel, it's recommended to use a straw when consuming vinegar drinks, just to be on the safe side!
