Lemon Coconut Poppy Seed Balls

These no-bake Lemon Coconut Poppy Seed Balls are bursting with fresh lemon flavour and are made with healthy, simple ingredients. A delicious and nourishing snack that's great to have stocked in the fridge!

Ingredients
  

  • 1 cup raw, unsalted cashews
  • 1/4 cup unsweetened shredded coconut, plus more for rolling
  • 1/4 cup coconut flour
  • 3 tbsp unpasteurized honey
  • zest of one lemon
  • 1/4 cup fresh lemon juice
  • 1 tbsp coconut oil, softened
  • pinch sea salt
  • 2 tsp poppy seeds

Instructions
 

  • Add all the ingredients except for the poppy seeds to a food processor and process until a dough forms.
  • Pulse in the poppy seeds.
  • Roll the dough into balls (~1 tbsp each) and roll in additional shredded coconut if desired.
  • Place in the fridge until ready to eat.

Notes

If you find that your dough is too soft to roll into balls, place in the freezer for 10 minutes first.
Store Lemon Coconut Poppy Seed Balls in the refrigerator in an airtight container for up to 5 days. You can also freeze them for up to 3 months.
