Lemon Coconut Poppy Seed Balls

Add all the ingredients except for the poppy seeds to a food processor and process until a dough forms.
Pulse in the poppy seeds.
Roll the dough into balls (~1 tbsp each) and roll in additional shredded coconut if desired.
Place in the fridge until ready to eat.
If you find that your dough is too soft to roll into balls, place in the freezer for 10 minutes first.
Store Lemon Coconut Poppy Seed Balls in the refrigerator in an airtight container for up to 5 days. You can also freeze them for up to 3 months.
