Lemon Herb Vinaigrette

This Lemon Herb Vinaigrette is bright, tangy and filled with fresh garden herbs. It’s easy to make and perfect for giving your summer salads a boost of flavour.

Ingredients
  

  • 1/4 cup fresh lemon juice
  • 1 tbsp minced shallot
  • 2 tsp dijon mustard
  • 1 tsp raw honey
  • 1 tbsp finely chopped fresh parsley
  • 1 tsp finely chopped fresh oregano
  • 1 tsp finely chopped fresh thyme
  • Sea salt and freshly ground black pepper to taste
  • 1/3 cup extra-virgin olive oil

Instructions
 

  • Add all the ingredients, except oil, to a small bowl and whisk to combine. While continuing to whisk, slowly pour in the oil. Adjust seasoning as needed and enjoy!

Notes

If the dressing is too tangy for your taste, feel free to add a little more olive oil. 
This dressing will keep for up to a week in an airtight container in the refrigerator.
