Add all the ingredients, except oil, to a small bowl and whisk to combine. While continuing to whisk, slowly pour in the oil. Adjust seasoning as needed and enjoy!
If the dressing is too tangy for your taste, feel free to add a little more olive oil.
This dressing will keep for up to a week in an airtight container in the refrigerator.
